100 g margariinia tai voita
¾ dl sokeria
1 muna
2 ½ dl jauhoja (esim. Provena flour mix with oats)
1 tl leivinjauhetta
1 tl vanilijasokeria
Täyte:
3-4 dl pakastemansikoita tai muita marjoja
sokeria maun mukaan
hieman perunajauhoa
Pinnalle:
½ dl sulatettua margariinia tai voita
½ dl sokeria
1 ½ dl kookoshiutaleita
1 rkl jauhoa (samaa kuin pohjaan)
1 tl vanilijasokeria
Vatkaa rasva ja sokeri juuri ja juuri sekaisin. Älä vaahdota. Lisää sekaan muna ja keskenään sekoitetut kuivat aineet. Leivo taikinasta n. 5 cm paksu tanko ja jaa se veitsellä noin 10 – 14 palaan. Laita palat muffinsivuokien pohjalle ja painele kevyesti niin, että taikina täyttää pohjan tasaisesti. Jätä taikina keskeltä lievästi kuopalle.
Sekoita pinnalle tulevan täytteen aineet keskenään.
Lisää pohjataikinan päälle hieman sulaa marjaseosta ja lisää lusikalla marjojen päälle kookostäytettä.
Paista 200 asteessa uunin alaosassan noin 20 minuuttia.
Kanattaa käyttää joko paksuja muffinsivuokia tai silikonisia.
