Kääretorttu:
4 munaa
1,5 dl sokeria
1 dl gluteenittomia jauhoja
0,5 dl perunajauhoja
1 tl leivinjauhoja
Täyte:
200 g maustamatonta tuorejuustoa
1-2 dl Lime curd (limehilloa) tai muuta, maun mukaan
Ja esim maitoa kostuttamiseen
Vatkaa munat ja sokeri vaahdoksi. Lisää keskenään sekoitetut kuivat aineet.Levitä taikina uunipannuun leivinpaperin päälle. Paista 225 asteessa n. 8 min.
Kumoa levy sokeroidulle leivinpaperille. Jäähdytä. Kostuta. Levitä täyte, jonka olet sekoittanut tasaisesti sekaisin. Kääri rullaksi. Ja laita vetäytymään jääkaappin.
Charlotten täyte:
8 liivatetta
4 dl kermaa
n. 1 dl sokeria
n. 2 tl van. sok.
1 lk persikoita (omassa mehussa)
1 tlk mandariinin paloja (omassa mehussa)
1 dl tölkin lientä
500 g rahkaa
Vuoraa iso kupera kulho kelmulla. Viipaloi kääretorttu ja asettele ne koko kulhon pohjalle ja reunoille.
Laita liivatteet likoamaan kylmään veteen, n. 10 min. Valuta hedelmät. Paloita persikat pieniksi. Vatkaa kerma ja sokerit vaahdoksi. Lisää rahka ja mandariinit. Vatkaa tasaiseksi massaksi. Lämmitä tölkin liemi melkein kiehuvaksi. Purista liivatteista liika vesi ja sulata ne kuumaan mehuun. Jäähdytä ja vatkaa nauhana kerma-rahka vaahtoon. Lisää viimeiseksi persikan palat ja sekoita.
Kaada seos kulhoon kääretorttuviipaleiden päälle. Anna hyytyä jääkaapissa seuraavaan päivään. Kumoa tarjoiluvadille ja koristele kermavaahdolla tai hedelmillä.
